The origins of Indonesian food can be traced back to ancient times and have been shaped by various influences. The indigenous culinary traditions of Indonesia were developed by the native Austronesian tribes, who cultivated rice, spices, and other agricultural products. The trade routes connecting Indonesia with India, China, the Middle East, and Europe played a significant role in introducing foreign ingredients, cooking techniques, and flavours to Indonesian cuisine.

Indian traders brought spices like cloves, cinnamon, and cardamom, which became integral to Indonesian cooking. Chinese merchants introduced soy sauce, tofu, and various stir-frying techniques. Arab traders brought Middle Eastern spices and introduced dishes like kebabs and rice-based dishes. The European colonization of Indonesia, especially by the Dutch, Portuguese, and British, further influenced the cuisine. The Dutch colonisation, in particular, left a lasting impact with dishes like nasi goreng (fried rice) and Indonesian-Indo fusion cuisine known as "rijsttafel" (rice table).
